RECIPE Exchange #2

I made a taco version of this the other night for dinner and while Jeremy and I were chewing, trying to decide if we liked it, we came up with this idea. It is really yummy, and could bge a fun twist on a hilday standby.

All you need is:

store-bought pie crust (or make your own if you are snotty that way)

2 apples

apple cider ( you could probably use applesauce, water, or whatever)

sugar

cinnamon

nutmeg,

cornstarch.

Roll out your crust and use a bowl to trace out as many smaller circles as you can get from the dough.

Set aside

For the filling:

2 large apples, peeled and diced
1/2 cup apple cider
1/2 cup granulated sugar
1/2 teaspoon cinnamon
1/8 teaspoon nutmeg
1 tablespoon cornstarch

Mix all but the corstarch in asaucepan over medium-low heat until apples are soft. (cute the apples thinly adn this won't take too long.) In a seperate bowl mix the cornstarch with some water until you get it dissolved enough to not have any clumps. pur the cornstarch and water mixture into the apples and let is sit until it thickens.

For assembly:

Place a small amount of the apples mixtue in the center of each circle. Then fold in half and crimp the edges with a fork. Cut slits in the top of the pastry to let the air escape while baking. Brush the top with a light egg wash and sprikle cinnamon and sugar over them. Then just bake until the crus it golden brown (probalby only 12 minutes at 350). Follow the guide on the pie crust.

Put some vanilla ice cream on the bad boy and enjoy! Yum!
